A quick pizza recipe with your choice of delicious toppings like our Hot Peppery Salami, anchovies and strips of sweet peppers
Make the bases thick or thin and choose any combination of toppings you feel like!
PIZZA BASE (makes 2 x 12" thin pizza or 1 x 12" thick)
3 x tea cups plain flour
1 x sachet dried yeast
1 x cup hot , but not boiling) water
Pinch of salt & sugar
splash of olive oil
Mix 1 x cup of flour, yeast, salt, sugar and stir in hot water, mix in another cup of flour to make a sticky dough, sprinkle about 1/4 of the last cup of flour onto a board, place dough onto board and kneed in flour, repeat this till all the flour is used up. Oil a pizza dish and sprinkle with polenta meal (optional). For 2 x thin pizza half mixture, roll into ball and push out to fit onto pizza tray, for thick pizza use all mixture on one tray. Put in a warm place to rise.............
meanwhile, prepare the tomato base and toppings............
Finely chop 1/2 onion & 1 clove of crushed garlic (optional) or 1 crushed dried chilli pepper (optional) put into a saucepan with a little oil and cook till transparent, then add 1 tin of chopped tomatoes a bit of seasoning and cook gently till reduced to thicken.
Now here you can be as adventurous as you like, the only thing you MUST have is block of mozerella cheese thinly sliced for the very top! Be careful not to add too many flavours or use too much as they will confuse each other.

Black olive salami, anchovies & strips of peppers
Fennel & Anise Salami, olives, & fresh chillies
Hot peppery salami, anchovies, strips of sweet peppers,
smear base of pizza with tomato sauce, add toppings and top with thin slices of mozerella cheese, place in a pre heated oven 225C and cook for about 10 - 15 mins (for thick bases cook at 200C for 20 - 25 mins..........ENJOY!
